The display helpfully reported " O FF ", which my embedded developer brain mistranslated as "oh, it's displaying hex; must be some programming glitch."

No dummy, it's saying "OFF" 🙂

The UPS will complain if it runs out of power, and it will shield the fridge from brief power flickers. It doesn't have to run the fridge for long, it just needs to be able to supply enough amps during the outage to keep the fridge's computer running. 1/

Completely useless except to refrigerator retailers, I can kind of see why it would exist though.

But this seems like something you would control with recessed switches inside a panel at the back or something if it exists at all.

Just like the TVs looping a video trying to showing off their brightest colours and deepest blacks.
Almost all "smart" appliances today have a "store" or "demo" mode. It shouldn't be that easy to turn on, but leave it to Samsung to dark-pattern it into existence.
